I showed him the list of knives from this thread, he liked the list and he had especially nice things to say about the Big Eddy and the Kershaw. He sharpened my Berkley real nice and said it was a woefully dull issue from the factory.

I have the CRKT knife from the give away at the last meet and greet for NWFR. It is a very smooth and does a nice job. I love my Kershaw hunting knives and would not trade them for the world. The even offer free sharpening just mail them in and a week or two later better then new. I send mine in ever two years for nice new edge, great company and service!

+1 for Kershaw. Seems like their steel is better than the cheapo berkley knives etc..

From a professional stand point, for dressing, gilling and or heading I would use a 40110 or a 40112 on this page, the Stiff Wide Boners.

And for Salmon Filleting I would use the 40534 or the 40539 on this page. It's best if you modify the tip by grinding it off flat.

For casual gutting and filleting I use one like this but the smaller size, I think it's a 5 or 6 inch blade. My favorite is just like this but it's a West Marine brand that came free from a $100+ order.... Holds a great edge and I like the shape of the spoon better.

I can say with out a doubt I have gutted and filleted more fish than anyone else on this forum. 16 years in the fish biz with about 10 in the fish house.
