EZ crab and Pasta

Crab Over Angel Hair Pasta (or any other pasta you like)

8 ounces of Angel Hair Pasta and large pot of salted water

2 tablespoons of butter

1/4 cup of olive oil

1/2 cup of sliced green onions

1 clove of garlic, minced

2 medium size ripe tomatoes, peeled, seeded and chopped

1/4 cup of dry white wine

1 tablespoon of lemon juice

8 ounces of crabmeat

1/4 cup chopped fresh parsley

salt and pepper

Cook pasta in a large kettle of salted boiling water until al dente. Drain pasta and put on a warm platter. Place your skillet over medium heat. Add oil & butter. When butter is melted, add green onions, garlic, tomatoes and wine. cook stirring until mixture boils. Reduce heat to a gentle boil and cook for 2 minutes. Mix in lemon juice, crabmeat and parsley. Cook stirring until crabmeat is just heated through. Season to taste with salt and pepper & pour over pasta.

Sounds delish, though needs more crab!!

I did not write down servings on the recipe, but this is a 2 serving recipe, so the amount of crab isn't too bad. Of course adding more crab is an easy fix.
