Hey mizm05 - meat was still firm but was fairly pale, not bad just not flavorful on it's own but easy to spice up and work with. The smoked fish turned out pretty good, going to make a dip out of it tonight. Basically a crab artichoke dip but with smoked chum instead of crab, sounds good to me haven't tried it yet though. Fried some up for dinner Sat night and dipped in a dill/garlic tartar sauce, not complaining!
