Yum Yum. You know you're cleaning them wrong. Plug in that electric turkey knife you never use. Hold them by the nose. Slice down behind the gill to the backbone then along the spine and stop one half inch from the tail. Flip that half on the fillet over with meat side up. Still holding the head, continue along the skin until the clean fillet just slides off. Have the wife take her rapala fillet knife and trim the one half rib cage out and you end up with pure meat, no bones and no skin. It takes about a minute and a half or less to do a whole perch. Fry in Shore Lunch for the best eating you'll ever have.

Well I have been told by a fisheries biologist that the highest nutritional value in a fish is in it's slime. Maybe those catch and release guys aren't telling all and are really licking them before throwing them back... I think any way you prepare em is all good for the soul.. Good eatin buddy!

You have to peal them. No skin to mess with. The meat will fall off the bones when you get done cooking them.
