walleye cheeks

Went out yesterday and caught some nice walleye. One of my favorites are walleye cheeks. Sautéed in butter and garlic or cooked in bacon fat with a coating of flour makes a pretty good little appetizer. Texture is firmer and reminds me of eating scallops.

Yummmm, those are the BEST part of a Walleye, and most people don't even know about them.

Those look tasty! I've had halibut, lingcod, salmon, and sturgeon cheeks, but never walleye! Will have to try that next time I get some walleye!
