Best Fish recipe?

I would be curious to hear others fish recipes? I love Kokanee, yellow perch and crappie the best. I mostly just egg flower or corn meal and fry. I've never caught or eaten a Walleye but heard they are also tasty! Anyone have a good barbeque method for trout? Thanks eat a few and release the rest...

sanfrandan, you are one forum away from this being in the right spot. I don't know if you saw that there is a Culinary Delights forum just above this one that people have started to pull together some awesome recipes. I bet if you ask this question in that area you'd get a better response.

Never mind it has been moved. Wow! These overlords are quick. :bounce:

The kids love when I make the "Hobo" BBQ trout. Season with Lemon Pepper, put several pieces of butter inside the trout with some chopped green onion and the wrap in foil and just throw on the BBQ. Hope you enjoy.

I've done trout like that, and it does turn out incredible. Occasionally, I will put actual lemon slices inside the trout, along with the butter.

This is a very good way to cook trout. And easy too. When I do it Ill use small trout. Put about 5 or so pan fryers on the grill, this way you can still do steaks or burgers and veggies. Talk about a good meal and awesome leftovers as well. The cool thing about trout this way is you can use any seasoning and it will turn out fine. My favorite is fresh lemons, fresh onions, fresh garlic and butter. Add some johnny's, garlic salt, salt, pepper and parsley its great. But Iv cooked the trout plain, w/ nothing while camping and its good too. While camping one time we used butter, minced garlic and teriyaki sauce and it was excellent

yeah you just cant fail with trout. i really really like zatarans fish fry crispy southern style. this stuff is mouth watering awesome. just clean fish cover in the fish fry and cook them in oil. http://www.ec-securehost.com/FrenchMark ... ges/23.jpg

I have heard that marinating any fish in a bag of maple syrup for a couple of hours and then cooking them on the grill gives it a great sweet taste. Might sound weird, but it is really good.

I have never heard about this. But I love the taste of maple and this sounds like a very tasty idea. It also sounds very messy LOL, but I will for sure give that a try, in fact maybe tonight, that sounds really good

I have always just dusted the pan fish with flour/salt/pepper, but I was told to try thin sliced onions and lemons stuffed inside and grill the trout...very good with a squirt of fresh lemon juice.
I am anxious to try the Zataaran (sp) fish fry. It just seems the Cajuns know how to do fish!

Ok, here's a killer recipe. Great Grandpa handed it down to me.

Take a few feet of aluminum foil and cut it off. Fold it over several times so you have a few layers of aluminum foil, and then curl up the sides so they are about an inch high. Like making a boat. Just a flat piece of aluminum foil with the sides folded up a bit. The flat part should be just big enough to hold the fillets in it.

Next. Put your fillets in the boat. Then put a few spoonfuls of olive oil, a few spoonfuls of white wine, a bunch of butter, some salt, some pepper, some paprika, some garlic salt, some Johnny's Seasoning Salt, and if you got fresh lemons, some lemon slices, or just some lemon juice. Careful though, too much of any of these seasonings will completely ruin the taste of fresh fish. You don't need to coat the fish with any of the seasonings. Just a small amount of each....The bigger the fish, the more the seasonings though. If you overload on anything, butter would be the best. I've also thrown a few sprinkles of brown sugar on, and it makes it good, but sort of for those who don't love seafood as much.

Smack it on teh bbq and your set!
Here's a picture of a white king on the bbq earlier this summer! Obviously the chunks of butter aren't melted, but they will after a few mins of bbq'ing

Sam, when do I get an invite? That looks great! Can almost smell the aroma through my CP.

My recipe is for panfish or catfish fillets. Soak them a couple hours in evaporated milk and then dredge them through corn meal and pan fry. All the fishy oils are sucked out of the meat and they taste very mild, almost shrimp-like.
