Trout Liver?
While filleting 2 limits of rainbow yesterday, I pulled a liver out and thought, wow, looks a lot like a chicken liver only smaller. My wife enjoys liver, me, not so much, but they looked really healthy. So, on a whim, I removed the liver from the next 3 trout, carefully cleaned them, removed connective tissue, rinsed and drained them. My wife melted some butter and after patting them dry with a towel, she pan fried them. I ate one and it wasn't bad at all as far as liver goes, with just a hint of fish taste to it. My wife said they were good, but not really worth the effort in her opinion. Maybe if they were sautéed with some diced onions....

I'm thinking, burbot bait... or a pate'... But now I'm really hungry for liver and onions, garlic..... of the bovine variety. ;)
